Fox nuts (Euryale ferox) grow in calm wetland ponds. Experienced harvesters dive to the pond beds to gather raw prickly lotus pods, washing away mud and extracting the black seeds with utmost patience.
Purified with Water
The freshly retrieved seeds undergo multiple rigorous cleansing cycles in fresh water basins to completely eradicate any silt, clay, and aquatic residues, leaving only pristine, spotless seeds.
Sun-Dried Naturally
Cleaned seeds are evenly spread across clean woven mats under the warm Indian sun for several days. This natural curing process stabilizes the inner kernel without artificial heat degradation.
Precision Size Grading
Before roasting, seeds are graded using calibrated mechanical sieves. This ensures each batch contains uniform sizes (4 Suta, 5 Suta, 6 Suta), allowing even heat penetration and consistent pop volume.
Extended Slow Roasting
The graded seeds are roasted in heavy iron and clay pans for up to 60 minutes over steady, gentle wood embers. This loosens the seed coat and develops the unmistakable nutty aroma.
